CHEATER'S MAC AND CHEESE
This Mac and Cheese is super cheesy (but in a healthy way, if you know what I mean), oil free, and It’ll take you 10 minutes or less to make.
The recipe is meant for 2 people, if you've got more folks in you family, -double it! 😉
I’m using Natural cream cheese in the video, but of course Smoky would be perfect too, and you don’t need to use nutritional yeast and smoked paprika with it.
Marmite can be swapped for some sea salt, if you prefer, and turmeric is optional, but it gives your pasta bright yellow colour which I love. Besides, turmeric is so healthy, so why not add st least 1/4 tsp!?
If even 10 minutes seems like ages, I’ve got another shortcut for you: just add a few spoons of Smoky in your pasta and mix it in - so easy that you’ll think you’re cheating 🤫

250 g pasta;
1 cup plant milk;
3 large spoons Terra cashew cream cheese - Natural or Smoky;
1/4 tsp turmeric powder;
If you're sing Natural, add 2 tbsp nutritional yeast and 1/4 tsp smoked paprika.
1/3 cup jalapeños or sundried tomatoes;
chopped parsley or other greens on top
1. Cook 250 g of pasta, following package directions.
2. Meanwhile, heat 1 cup plant milk, mixed with 3 large spoons on Natural of Smoky Terra cream cheese and 1/4 tsp turmeric and 1 tsp Marmite. If you're using Natural, add 1/4 tsp smoked paprika and 2 tbsp nutritional yeast (these aren't necessary to add if you're using Smoky).
3. Stir the sauce consistently until it's well-mixed and gets to the right texture. You can use a stick blender to make it super smooth or just mix for a little longer with a soon, breaking up all the lumps.
4. Mix cooked pasta in the sauce, add 1/3 cup jalapeño peppers or sundried tomatoes, top up with chopped greens.
