Who doesn't love a comforting bowl of soup, especially on a cool day?

This Chickpea & Kumara soup is not only comforting, but also really good for you! You'll get the healthy nutrients from vegetables, lots of protein from the chickpeas and cheesy creaminess from Terra Smoky cashew cream cheese.

The soup is super easy to make, just watch the short 1,5 minute video below and follow me.

This recipe gives you a large amount, enough for 2 days (make only half the amount if you want less). So if you make it today, you've got tomorrow's lunch sorted. And believe me, the soup gets even better the next day!

You need:

5 cups of vegetable broth (or broth powder mixed with water);

4 medium orange kumaras;

4 small (2 medium) carrots;

2 cans of chickpeas;

1/2 cup of Smoky cream cheese;

salt, pepper - to taste

your favourite fresh herbs: parsley, chives etc.


  1. Bring 5 cups of vegetable stock to a simmer.

  2. Chop 2 medium kumaras and 4 small (2 medium) carrots. Add the chopped vegetables to the broth and cook for 10 - 15 minutes on low - medium heat, covered. The vegetables ned to soften by the end of cooking time (check with a fork).

  3. Add 2 cans of drained and rinsed chickpeas and 1/2 cup Smoky cashew cream cheese. Mix in with a spoon and cook for 2 more minutes.

  4. Blend with a stick blender until smooth and creamy.

  5. Enjoy with a slice of fresh bread, herbs or roasted chickpeas on top.
