SWEET & YUMMY SCONES
Believe it or not, but I’d never made or even tried scones in my life... until recently! 🤭
These baked goods aren’t really a thing in Eastern Europe, where I grew up, and they weren’t part of my childhood.
Everything changed a few weeks ago, when I decided to experiment in the kitchen and discovered these yummy sweet scones, which have now become one of my favourite recipes!
They turned out to be easy to make, the whole process takes less than 30 minutes! Normally, you'd use butter or margarine to make scones, but our oil-free Natural cashew cream cheese is a perfect substitute, making the scones much, much healthier! 😇
They made a perfect, filling breakfast or snack on the go.
* For a gluten-free version, mix 2 cups of GF all-purpose flour with 1 1/2 tsp xanthin gum.

1 cup high grade flour;
1 cup wholemeal flour;
! To make the scones gluten-free, mix 2 cups of GF all-purpose flour with 1 1/2 tsp xanthin gum.
1/3 cup coconut sugar;
1 tbsp baking powder (yes, tablespoon!);
1/2 tsp cinnamon powder, more to sprinkle o top;
1/4 tsp salt;
1/3 cup Terra Natural cashew cream cheese (about half of a 200 g jar);
1/2 cup plant milk (soy, almond, oat - whichever one you prefer);
juice of 1 mandarin;
1/3 cup diced dried apricots (or sultanas, or dried fruit of your choice);
1/3 cup vegan chocolate drops (or dried fruit of your choice);
Preheat the oven to 190°C (375F). In a large bowl, whisk the flours, coconut sugar, baking powder cinnamon and salt until well-mixed.
Add 1/3 cup of Terra Natural cream cheese in the flour. First start mixing with a spoon, smashing the cream cheese into the flour mixture. Then use your hands and get the flour to a crumbly consistency, like I'm showing in the video.
Add 1/2 cup plant milk, juice of a mandarin and the dried fruit. Mix until just combined, the dough should be quite sticky.
Get a large cutting board ready, cover it with some flour. Cover your hands with flour, form the dough into a ball and transfer it on the board.
Pat the dough into a thick circle. Cut in 8 pieces, like a pizza.
Transfer each slice on baking sheet, covered with parchment paper. Brush with plant milk (if you don't have a brush, use your hands, like I do in the video!). Sprinkle coconut sugar and cinnamon on top.
Bake in the oven for 15 - 17 minutes at 190°C. Let cool and enjoy.
